There is something about summer that always makes me want to slow down…even though life somehow speeds up.

The kids are home from school and every day feels like a mix of sunscreen, lemonade stands, grocery store runs, trying to entertain three kids, and attempting to answer emails before someone yells, “Mom!”

To be completely honest, I almost didn’t make this recipe.

The day I filmed this high-protein street corn dip was one of those days where absolutely nothing went according to plan. We walked to one coffee shop that was closed, then another, then waited forever for food with three hungry kids, spent way more money than I intended, and by the time we finally got home, I had convinced myself I should just skip filming altogether.

But one thing I’m learning while building Bridgette Blakey Wellness is that consistency isn’t glamorous. Some days inspiration strikes and content feels effortless. Other days you show up anyway. Those are usually the days that matter the most.

This season of life has honestly been one of the busiest (and most exciting) I’ve ever experienced. Between launching my She Eats Podcast, growing Bridgette Blakey Wellness, creating new recipes every week, helping women learn how to fuel themselves without obsessing over food, and planning my very first luxury Eat. Glow. Love. Sonoma Retreat, life has felt incredibly full, in the best possible way.

Hosting a wellness retreat has been a dream of mine for years.

I cannot wait to spend a long weekend in Sonoma with an incredible group of women cooking beautiful meals together, sipping wine, practicing Pilates, having deep conversations, shopping through charming downtown streets, and simply slowing down long enough to reconnect with ourselves.

And this recipe feels exactly like that. Simple ingredients. Fresh summer produce. Big flavors. A little nutrition science. And plenty of joy.

The Original Street Corn Dip

Traditional Mexican street corn (also known as elote) is one of my favorite summer foods. Fresh grilled corn is coated in mayonnaise, crema, cotija cheese, chili powder, lime juice, and cilantro before being served straight off the cob.

Street corn dip takes those exact flavors and transforms them into the ultimate party appetizer.

Most classic recipes rely on a combination of:

  • Cream cheese
  • Sour cream
  • Mayonnaise
  • Cotija cheese
  • Grilled corn

They’re absolutely delicious. They’re also incredibly rich and relatively low in protein. As a sports dietitian, my brain is almost always asking one question: “How can I keep everything people love while making it a little more nourishing?” That’s exactly what happened here.

Why I Made It High Protein

Instead of using a heavy cream cheese base, I swapped in blended cottage cheese and Greek yogurt.

Not because I’m afraid of fat. Not because foods need to be “healthy.” But because protein is one of the nutrients most people—especially active women—struggle to eat enough of throughout the day.

Blending cottage cheese creates an unbelievably creamy texture while adding a significant protein boost without changing the flavor. Once it’s mixed with charred grilled corn, lime, garlic, chili powder, smoked paprika, cilantro, and cotija, you honestly can’t tell the difference. You simply get all of the creamy richness with more nutrition packed into every bite.

Why Protein Matters (Especially for Active Women & Athletes)

As a registered dietitian specializing in sports nutrition, I’m constantly reminding athletes that protein isn’t just something you drink after lifting weights. It’s one of the most important nutrients for everyday life.

Protein helps:

  • Build and repair muscle tissue
  • Support recovery after workouts
  • Maintain lean muscle during weight loss
  • Increase satiety so meals keep you full longer
  • Support immune function
  • Promote healthy aging by helping preserve muscle mass

One thing people often overlook is that recovery doesn’t only happen after training. Recovery also happens after long workdays, busy parenting days, stressful weeks, and poor sleep. Life itself is physically demanding.

That’s why I love finding opportunities to naturally include more protein—even in appetizers. Because sometimes the foods we share around the table can also help us feel our best.

The day I almost skipped filming this recipe ended up reminding me why I started doing all of this in the first place. Not to create perfect content or to have perfect kids or perfect days.

But to create recipes that help busy women feed themselves and their families well—even on chaotic days.

Because those are the days we need good food the most. And if you’re making this for a summer BBQ, a family gathering, or simply because you happened to have fresh corn sitting on your counter…

Ingredients

Creamy Base

  • 2 cups 2% cottage cheese
  • ½ cup plain Greek yogurt
  • Juice of 1 lime
  • ½ teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ¼ teaspoon cumin
  • ½ teaspoon sea salt
  • Fresh cracked black pepper

Mix-Ins

  • 2½ cups roasted corn (fresh grilled is best)
  • ¼ cup chopped cilantro

Toppings

  • ⅓ cup crumbled cotija cheese
  • Tajín
  • Extra chili powder
  • Fresh cilantro
  • Lime wedges
  • Hot honey drizzle (optional—but SO good)

How to Make High-Protein Street Corn Dip

Step 1

Remove the husks from the corn and grill over medium-high heat until beautifully charred, turning every few minutes.

Don’t be afraid of dark spots, that smoky flavor is what makes this dip taste like authentic street corn.

Once cool enough to handle, slice the kernels off the cob.

Step 2

Add the cottage cheese, Greek yogurt, lime juice, chili powder, smoked paprika, cumin, salt, and pepper to a blender.

Blend until completely smooth and creamy.

Step 3

Fold in the grilled corn and cilantro.

Step 4

Spread into a serving bowl and finish with cotija cheese, extra grilled corn, Tajín, cilantro, a squeeze of fresh lime, and a drizzle of hot honey if you’re feeling fancy.

Serve immediately or refrigerate until ready to enjoy.

Ingredients
 

For the Creamy Base

  • 2 cups 2% cottage cheese
  • ½ cup plain Greek yogurt
  • 1 juice of 1 lime
  • ½ tsp chili powder
  • ½ tsp smoked paprika
  • ¼ tsp ground cumin
  • ½ tsp salt

Roasted Corn

  • cups grilled or roasted corn (about 4 ears of fresh corn)

Toppings

  • cup crumbled cotija cheese
  • 1 tbsp chopped cilantro

Equipment

  • 1 grill or BBQ

Instructions
 

  • Preheat your grill to medium-high heat (about 400–450°F). Remove the husks and silk from the corn and lightly brush with oil.
  • Grill the corn for 10–12 minutes, turning every few minutes until nicely charred on all sides. The darker the char, the better the flavor. Let cool slightly, then cut the kernels off the cob.
  • Blend all base ingredients until completely smooth and creamy.
  • Mix base with corn until evenly combined.
  • Spread into a shallow serving dish and top with crumbled cotija cheese.

Notes

  • Fresh grilled corn makes all the difference. The smoky char gives this dip authentic street corn flavor.
  • Blend the cottage cheese until completely smooth so no one will ever know it’s the secret protein ingredient.
  • This dip tastes even better after chilling for 1–2 hours.
  • Frozen corn works well—simply roast it in a hot skillet until caramelized before adding it to the dip.
  • For extra heat, leave the jalapeño seeds in or add a dash of hot sauce.
